{Ingredients}
1 pack ramen noodles
½ seasoning pack or ½ tbsp of chicken bouillon powder
3 eggs
½ cup baby spinach
½ cup frozen mixed veggies
1 tsp lite soy sauce
½ cup cooked & diced chicken (meat is optional)
Canola cooking oil
1. Boil water in medium saucepan, break noodles in half and add to the pan along with frozen veggies *cook until the noodles & veggies soften
2. Heat up a large frying pan with the canola oil, put on medium heat *not too hot!
3. In a mixing bowl, add 3 eggs, seasoning or bouillon, spinach, chicken, & soy sauce then wisk
4. Strain noodles & veggies, rinse with cool water before adding to egg mixture. Mix well!
5. Poor the noodle/egg mixture in the pan *make sure it's spread out evenly….and wait ^^
6. Once you see the egg mixture is firm, carefully flip your pancake over and continue cooking on the other side. *The cooked side of the pancake should be golden & crispy!
7. Once the other side of pancake is done, slide onto a plate and blot with paper towel to grab any excess oil. Let it cool a bit then slice the pancake like a pizza and serve!
*I always serve with a side of ketchup or sweet chili for dipping, but it’s also good without!
